Air Fryer New Potatoes With Summer Veggies & Mustard Vinaigrette

I love summer salads! Actually, I love salad anytime of year and always have, even as a kid. There is something special about the freshness of summer salads. As you hear me mention over and over there is nothing like the quality of seasonal fruits and veggies. If you can find and afford them, there is nothing like them!


I was getting stuck in a rut with my cooking. I kept making the same thing over and over. Some weeks are just like that - creativity is lacking.


I decided to start combining things I don’t always think to combine. This salad is a mixture of air fryer new potatoes with crispy mixed lettuces, heirloom cherry tomatoes, cucumbers, and carrots. I topped it with my homemade mustard vinaigrette and fresh cracked pepper. Summertime goodness in a bowl!

Ingredients

6-10 new potatoes cut into quarters

Mixed lettuces

10-20 heirloom cherry tomatoes, cut in half (any tomatoes will do, this is just what I used.)

1/2 large cucumber, cut into half moons

2-3 carrots, sliced

Olive oil

Salt & pepper

2 tbsp dijon mustard

2 tbsp champagne vinegar ( you could also use balsamic, red wine, or rice wine vinegar)

1 tsp maple syrup

1 tbsp olive oil

salt & peper

  • Combine dijon mustard, champagne vinegar, maple syrup, and olive oil. Mix or shake until combined. Add salt and pepper to taste.( This is also where I wing it a little. I will add more vinegar, mustard, or both depending on my needs that day. Play with it to see what you like). Set the dressing aside.

  • In a small bowl add potatoes, a drizzle of olive oil, salt and pepper. Toss potatoes to season.

  • Place potatoes in air fryer for 7-10 minutes. You will want to check them to see if they are completely cooked. The size of the potato can alter the cooking time. Set aside to cool slightly.

  • In a bowl combine mixed lettuces, heirloom cherry tomatoes, cucumbers, and carrots. Add cooled new potatoes.

  • Top with mustard vinaigrette and toss to combine. Add salt and pepper to taste.

  • Enjoy immediately!
