Black Bean & Plantain Arepa Sandwiches

Black bean & plantain arepa sandwiches by Minimalist Baker. They were so fun to make and delicious! They have guacamole, black beans, roasted plantains, cilantro, and spicy cabbage. We topped them with a little hot sauce (we like things spicy around here).

I have been having so much fun trying new recipes. I was definitely stuck in a food rut a few months ago. I would make the same things every week because I knew my family would eat them and I could make them without putting any thought into it at all. I could probably make most of the recipes in my sleep. Now, I’m having a blast and realizing that it doesn’t take any more time to make these things than my old recipes did. It actually inspires me to get even more creative. I can take these recipes and make theme the first time and see how I would modify it to make it my own. I’m truly loving it! What has inspired you lately? I’d love to hear about it.
