Black Rice or Forbidden Rice

Rice is probably one of my all time favorite foods. If you asked me what food I could not live without rice would be at the top of my list.


How can you not love rice?!? It is so versatile and so delicious!


Black rice is one of my favorites. Black rice, also called forbidden rice or purple rice, gets its signature black-purple color from a pigment called anthocyanin, which has potent antioxidant properties. It has a mild, nutty flavor and a chewy texture.


Black rice is a good source of several nutrients, including protein, fiber, and iron. It contains over 23 types of antioxidants and has the highest antioxidant activity of all rice varieties.


It’s both delicious and good for you! I also love how the color makes your veggies pop! I served it with some steamed green beans but you could add it to any stir fry, salad, or any other dish you like.

Here’s how i cook it:

Ingredients

1 cup black rice

2 cups filtered water

1 tsp salt

  • Rinse your rice under cool water to remove some of the extra starch. Drain.

  • Add rinsed rice, filtered water, and salt to a saucepan and bring to a boil.

  • Once boiling, cover it and reduce the heat to a simmer.

  • Cook the rice for 30-35 minutes, or until rice is tender, chewy, and all the liquid has been absorbed.

  • Remove from heat and let the rice sit for about 5 minutes before serving. (This is the hardest part for me! I like to eat it right away!)
