Crispy Miso Chickpea Bowls with Garlic Sesame Dressing
We are living in a crazy time. I have spent the weekend feeling sad and angry. I often comfort myself by getting in the kitchen. Cooking feels insignificant but it helps me feel grounded. When I cook I am coming from a place of love and that is exactly what we need more of right now.
I made Minimalist Baker: Crispy Miso Chickpea Bowls with Garlic Sesame Dressing. She suggested topping it with her Quick Ginger Garlic Miso Tahini Dressing. I definitely recommend taking the extra step to make the dressing, it was well worth it. I do have to say the chickpeas were the star of the show. They were the perfect combination of sweet and spicy and added that crunch I’m always looking for in my food. I did a quick stir fry to the veggies we used so they were still bright in color and crispy. You could do raw or cooked veggies in this recipe easily. Basically, use what you have on hand and just adapt the recipe.
