Crispy Quinoa Sweet Potato Fritters

Every day I try to focus on the little things that make me happy and bring me joy. Things like sitting outside in the sun, reading a book, going for a walk, hanging out with my family, petting my dog, riding my bike, cooking good food, and listening to music. I find when I focus on the good things, the things that make me happy and bring me joy, I spend less time focused on the things that make me worry and create anxiety.

Yesterday, while I made these amazing Crispy Quinoa Sweet Potato Fritters by Minimalist Baker, I was feeling a little sad. I turned on some of my favorite music and kept the back door open so I could dance, sing, enjoy the outdoors, and cook. I think it made these fritters taste even more delicious!
