Delicious Vegan Biscuits

Nothing screams weekend to me like homemade biscuits! Saturday is my day off from work. I like to have a nice slow start to the day and then a delicious homemade breakfast. Our weekend breakfasts vary from gluten free waffles, to tofu scramble with roasted breakfast potatoes, to biscuits. My family has a soft spot for biscuits. These are The Best Damn Vegan Biscuits by Minimalist Baker. They are light, flaky, and delicious!

Homemade biscuits always seemed a little intimidating to me. Lots of rolling out and cutting shapes. I am not much of a rule follower so I don’t do either of those things. 😂 I follow the ingredient part of the recipe and then I put my own spin on it. I break the dough up into 6 equal sections (as equal as my eyeballing it gets) and I make sure they are in a ball like shape and then I bake them. They are perfectly imperfect!
