Faux Chicken Salad
I love a good sandwich, don’t you? Some nice toasted gluten free bread, with lots of lettuce, tomato, and avocado, along with the most delectable faux chicken salad. It is truly one of the easiest and most delicious lunches.
The recipe for this faux chicken salad was adapted from the cookbook, How It All Vegan. It has only 7 ingredients and can be made to order or done a day or more in advance. I feel like the flavor gets better each day.
It calls for tempeh, which is fermented soy. Fermented foods are so good for you. Tempeh is high in protein, prebiotics and a wide array of vitamins and minerals.

Ingredients
1 cup of tempeh cut into chunks
1/2 cup veganaise (soy mayonaise)
3 stalks celery, chopped
2 dill pickles, chopped
2 tsp dijon mustard
2 tsp Braggs Amino Acid
2 garlic cloves, minced
Salt & pepper to taste
Steam the tempeh for 15 minutes.
Combine all other ingredients in a small bowl.
Add tempeh to other ingredients once it has cooled and toss.
Add salt & pepper to taste.
This tastes great in a sandwich or on a salad.
