Ginger Sweet Potato Dal with Coconut Leeks
My cooking goes through phases, just like the rest of me. After the holidays and my surgery, I felt a little uninspired. Luckily, I have a great husband who will jump in when I am in a rut.
The last few weeks I’ve been feeling so inspired to be in the kitchen. Part of it has been that Dave and I started cooking together. The creativity and energy has really inspired me. I’ve been trying lots of new recipes including this one.
This is Ginger Sweet Potato Dal with Coconut Leeks by The First Mess. It has everything I love; ginger, sweet potatoes, lentils, and leeks.
I have to say those coconut leeks are everything! You could add them to anything and they would add a magical quality to the dish.
I loved this so much that I ate the leftovers for lunch the next day. I sautéed a bunch of kale and added it to the mix. So good!
The best thing about this recipe is you could add whatever veggies you wanted and it would taste equally as amazing. This is on our weekly rotation now.
All my leek lovers out there; don’t sleep on this one!
