Gucci Dave's Cauliflower Bahn Mi
This may be the best sandwich I have ever had in my life! 💯 It was so good we ate it two days in a row! 😋 However, I cannot take any credit for this sandwich. My sweet husband gave me a break this week and totally hit a home run!
What is this amazing sandwich?!? It is a cauliflower bahn mi. The cauliflower is dredged in batter and roasted. The vegetables are pickled. The bread is perfectly toasted. The sauce was a mixture of hoisin and veganaise. I am drooling just thinking about it right now. I could literally eat it everyday.

Pickled Vegetables
1/2 cup rice wine vinegar
1/4 cup of filtered water
1 tsp salt
3-4 cloves garlic thinly sliced
3 carrots julienned
1/2 large cucumber seeded and julienned
2 jalapeno peppers, seeded and julianned
1 small shallot, sliced thinly
1/2 cup red cabbage, sliced thinly
Cauliflower
1/2 head of cauliflower cut into florets
3/4 cup flour
1 cup of cold water
salt & pepper to taste
Sauce
2 tbsp veganaise
1 dollop hoisin sauce
1 tsp mirin
Additional Ingredients
Kaiser rolls
Sriracha
Cilantro
Combine rice wine vinegar, water, salt, and garlic for pickling the vegetables. Put in a sauce pan and heat until salt has dissolved. Pour over julianne vegetables. Allow pickled vegetables to sit at room temperature for 2 hours and then place in the refrigerator for 1 hour.
Preheat oven to 400 degrees. Combine flour, water, salt and pepper to make batter. The consistency should be similar to pancake batter.
Place cauliflower florets in batter and cover completely. Place florets on a baking sheet with a silicone baking mat or parchment paper. Bake for 12 minutes on one side, flip and cook for another 12 minutes. Florets should be golden brown. Remove from oven and set aside.
Combine veganaise, hoisin, and mirin.
Toast kaiser roll until golden brown. Spread hoisin sauce on both sides of roll. Add cauliflower, pickled veggies, cilantro, and sriracha to taste. Enjoy immediately.
