Mushroom Wild Rice Soup

Have you ever tried to take a picture of something knowing it was not going to come close to showing how amazing the thing was? That was this soup. The picture looks pretty ho hum but the soup was incredible.


This soup was a win almost even before I made it because it has two of my favorite ingredients: rice and mushrooms. The low calorie and high nutrient contents make wild rice a nutrient-dense food. It's a very impressive source of minerals and a great plant-based protein source. Add to that the fact that mushrooms are a rich, low calorie source of fiber, protein, and antioxidants. You really can’t go wrong!
