Pulled Mushroom Tacos
These tacos are a new favorite in my house. This recipe is Pulled Mushroom Tacos With Salsa Guille by Andrea Aliseda from Epicurious.
I have to admit I didn’t read through the recipe in its entirety. I didn’t have the ingredients to make the Salsa Guille. While I imagine the salsa adds that extra something, the mushrooms were a real show stopper. It was hard to actually get them to the taco because we couldn’t stop eating them. They were so good that every time I ask Parker what she wants for dinner she asks for these. We topped them with some avocado sauce, radishes, and cilantro. They are divine!
Eating good food that I make myself is one of the ways that I take care of myself. The things I cook and the recipes that I experiment with have evolved over time. It took time to build up the confidence to try certain recipes and use cooking techniques that I hadn’t tried before. It is a practice, just like so many other things in my life. It’s far from perfect. It allows me to be creative as well as give something to others that came from my heart. Cooking may not be your thing and that is ok. But I hope that you do play around, experiment and find the things that help you to feel good and take care of yourself.
