Raw Beet Salad

This raw beet salad is both easy to make and extremely tasty. Beets are a great source of fiber, folate, and vitamin C. Here is my recipe:

  • 3 beets, peeled and shredded

  • 2 tbsp honey

  • 1.5 tbsp dijon mustard

  • 6 tbsp red wine vinegar

  • 1 tbsp olive oil

  • sprinkle of salt and pepper

Put shredded beets in a bowl. In a small bowl wisk together the remaining ingredients. Pour over beets and coat completely. You can enjoy these immediately or put them in the refrigerator in a sealed container to enjoy later. These are great by themselves or as a topping for a vegetable salad, tacos, falafel, or anything else you can think of
