The Most Amazing Salad Sandwich!
This is my husband’s amazing creation. We like to call them salad sandwiches (even though it might be more of a wrap). It is a mixture of kale, carrots, cucumber, basil, cilantro, pickled red cabbage, sweet peppers, sesame seeds, and sunflower seeds. We mix it with a little Annie’s Goddess dressing and serve it on a tortilla with a smear of hummus and sriracha.
I love how colorful this is but the taste is fire! The best part about this dish is you can use anything you have in the fridge. We have probably made this 100 different ways and every time it’s incredible. Simple and delicious, my two favorite words.
Salad Sandwich Recipe:
2 leaves of kale julienned
2 small carrots sliced into thin rounds
1/4 of a medium cucumber cubed
10-12 leaves torn into small pieces
4 stems of cilantro chopped
1/2 cup pickled cabbage
3 small sweet peppers thinly sliced
1 tbsp sunflower seeds (add more or less to your liking)
1 tsp sesame seeds (add more or less to your liking)
1 tbsp Annie’s Goddess Dressing. I do this to order, more or less depending on your taste.
1 tbsp hummus per tortilla
Sriracha to order based on taste.
Mix all salad ingredients in a small bowl. Add in sunflower seeds, sesame seeds, and goddess dressing to suite your taste. Take a tortilla and spread the hummus on. Add sriracha to order (or leave off if you don’t like it). Spread salad mixture on tortilla, roll up and eat. You can substitute bread, pita, hoagie rolls, gluten free bread, or wraps. Enjoy!
