Vegan Gluten Free Banana Bread
I have been wanting to experiment with my mom’s banana bread recipe for a while. I had already made it vegan but I have been apprehensive to make it gluten free. When something tastes so good why would you mess with it?
I finally got my nerve up yesterday to give it a try. I used Bob’s Red Mill Gluten Free 1 to 1 Baking Flour instead of regular All Purpose Flour. The result was amazing! It was so moist, fluffy, and delicious!
Vegan Gluten Free Banana Bread
1 cup coconut sugar
4 tablespoons vegan margarine (I like to use Earth Balance
1 flax egg (1 Tbsp flaxseed meal + 2 ½ Tbsp water) or other egg replacer
3 mashed bananas
1 1/2 cup Bob’s Red Mill Gluten Free 1 to 1 Baking Flour
1 tsp baking soda
1 tsp salt
Preheat oven to 350 degrees. Grease a loaf pan.
Mix sugar, margarine, flax egg, and bananas together. Add in flour, baking soda, and salt. Mix until fairly smooth. Pour batter into loaf pan and put into oven. Bake for 45-55 minutes or until risen. When cooked, a toothpick inserted into the center will come out clean.
Allow to sit for 10 minutes and then serve and enjoy!
