Vegan Risotto with Miso and Spring Vegetables

Spring has sprung! I am loving all the veggies that are now in season. One of my all time favs is asparagus!


I have been making all my favorites; from asparagus soup to roasted asparagus and everything in between.


When Lisa Moore Wellness suggested I try this recipe with asparagus and miso, I knew I was going to love it.


This is Vegan Risotto with Miso and Spring Vegetables by Minimalist Baker. This recipe includes all the things I love; rice, mushrooms, asparagus, miso, and, the often overlooked, peas. You top it with a vegan Parmesan cheese. It is creamy and delicious and I was so excited to have leftovers to eat the next day.
