Vegan Pumpkin Cinnamon Rolls

Felt inspired to make some Vegan Pumpkin Cinnamon Rolls by The Minimalist Baker. They were really delicious and so decadent. The pumpkin really added another layer of flavor!

I didn’t follow the recipe exactly. For the filling I just used the vegan margarine, sugar, and cinnamon. For the topping I used vegan cream cheese icing but with half the normal amount of powdered sugar. They still came out completely amazing.

My mornings usually call for a smoothie or fresh fruit with nut butter. However, during quarantine I’ve been conscious of the fact that breaks in routine are called for. This was more about making a memory with Parker than it was about eating a healthy breakfast. This was definitely a good memory. There’s nothing like a warm cinnamon roll right from the over.
