Charred Corn Slaw With Peanut Butter Lime Dressing

The warmer weather has me in the mood for lots of salads and slaws! There is such a cooling quality to cabbage and other salad greens. My body just craves them, especially after being outside all day.


This is Charred Corn Slaw With Peanut Butter Lime Dressing by The First Mess. I love the creaminess of the peanut butter mixed with the tanginess (is that a word) of the lime. It is loaded with a whole rainbow of veggies that make it not only super tasty but also amazing to look at. I did add a little drizzle of sriracha to the top to kick it up a notch. While this could make a great side we ate it as our main meal. So good! You want to make this ASAP!


Just in case you didn’t know, cabbage is loaded with vitamin K and vitamin C, it is rich in vitamin B6 and folate, and is also high in fiber. It’s good for you and your gut!
