Lemony Chickpea Soup

I’ve had soup on my mind lately. Who am I kidding?!? I have soup on my mind all the time. ;)

There is something about soup that just feels so comforting. It’s like giving your insides a hug.

This soup from The First Mess is Lemony Chickpea Soup with Spinach and Potatoes.

It was so amazingly delicious and it was easy to make. Isn’t that what we’re all looking for; easy and delicious!

Making homemade soup is a great stress reliever, unless it’s not. So many of my clients feel like they don’t have time to make a homemade meal.

This soup can be made in about 30 minutes. Eating well is one of the best cures for stress.

Tips to make your life easier!

  • Use your food processor to chop, slice, and shred. This helps me so much! I am a slow chopper so this can cut about 10 minutes off of my prep time.

  • Use store bought veggie broth. Laura suggests making your own, which is a great idea and something I try to do over the weekend but if you don’t have time a store bought broth or bouillon will work too.

  • Use canned beans instead of dry. I always keep canned beans on hand in case I forget to soak my beans overnight.

  • Substitute. I try to use what I have on hand. This recipe calls for spinach, which I happened to have, but if I didn’t I would just use kale or whatever green I had on hand. One less trip to the grocery store.
