Cold Ginger Noodle Salad with Mint, Edamame, and Orange

Slowly getting back in to some sort of routine again. Last week I felt a little frazzled and overwhelmed and didn’t feel like cooking. I actually felt busier last week than I did when I was commuting to work.

This week I’ve been feeling better and have started cooking more. Cooking is definitely part of my self care. It feeds my soul (no pun intended). It is how I show love and is one of the things in my life that helps me feel grounded and present. Definitely need it back in my life right now!

I made this Cold Ginger Noodle Salad with Mint, Edamame, and Orange by The First Mess. I am a lover of all things with fresh mint so I knew we had to give this a go. We were not disappointed! The flavors were amazing together. The perfect mixture of sweet and spicy.
