Miso Butternut Squash Soup

It has been pretty cold in the ATL lately. It’s funny to think that I grew up in Michigan but can’t take it when it’s in the 30’s and 40’s. My blood is thin!

When it’s cold out, this girl loves some hot soup. I love it so much I make my family crazy.

I keep trying new recipes to keep things interesting. This week I made this amazing Miso Butternut Squash Soup by Rachel Gurjar.

It was so creamy and delicious. I love the silkiness of the soup with the crunch of the peanuts and the sweetness of the butternut squash with the spiciness of the chili oil. The flavor combos were out of this world. Pair it with some homemade sourdough bread and a salad and it’s a perfect winter time meal.
