My Favorite Veggie Burger

You have no idea how excited I am to share this picture with you. I have been making these veggie burgers for years. They are amazing and delicious! The only reason I haven’t shared them before is because I usually make them at the last minute and they don’t hold together like I want them to. We end up using them as a crumble on salads or we try to put them in a bun and just use a fork to eat what falls out. 🤷🏻‍♀️

When I made these last time I actually planned ahead. I cooked the quinoa when I was making lunch so it had plenty of time to cool. I’m pretty sure that made all the difference.

This recipe is Easiest Ever Grilled Veggie Burgers by Chris Morocco at Bon Appetit.

I remember the first time I saw the recipe. It calls for a mixture of veganaise and almond butter. Sounded like a strange combination but it is amazing. I don’t grill these burgers, I cook them in my cast iron pan. Out of all the different veggie burger recipes I’ve made over the years these are a family favorite. With a mixture of beans, tofu, and quinoa they are packed with protein.

Are you going to make these burgers? Let me know in the comments!
