I just got home from an amazing, long weekend in the North Georgia Mountains. I got to spend some quality time with some of my favorite people. Having the opportunity to spend time out in nature is grounding, rejuvenating, and exhausting.
When I got home last night I wanted to eat something that was both hearty and comforting. I made Jammy Sun Dried Tomato White Beans With Crispy Caper Breadcrumbs by The First Mess.
Not only does this recipe combine beans and tomatoes, two of my favorites, but it is also easy to make when you come home from the mountains exhausted.
I could eat the crispy caper breadcrumbs by themselves all day long. They add that extra something to an already amazing dish.
