Spicy Sichuan Eggplant & Kale

I have to admit that I haven’t been cooking much lately. It’s just too damn hot! All I want to do these days is eat fruit and drink coconut water.

We are still getting delicious veggies from our farm share, so I can’t stay out of the kitchen completely. This week we got one of my favs, eggplant.

I also had an abundance of kale from a friend of a friend’s organic farm. For some reasoning a super hot and humid day, I was feeling like something spicy! I decided to make Vegan Sweet and Simple’s Spicy Sichuan Eggplant and Kale. It had all the flavors I was searching for on a 98 + degree day!

I used a couple of jalapeños we had for the hot peppers. We have had some real duds lately; but not this time. I basically pepper sprayed our whole house. We were all coughing and our eyes were watering. I also omitted the Beyond Meat crumbles. I’m not a huge fan of the fake meats and the recipe was fantastic without it.
