Gazpacho

One of my favorite parts of summer is the abundance of seasonal produce.

We got a ton of tomatoes in one of our recent CSA shares. I can eat a tomato like an apple, I love them so much. But there are only so many tomatoes one girl can eat when she has a lot of other fruits and veggies around.

I decided to make gazpacho before I lost any of my beautiful tomatoes. I normally make a chunky gazpacho but this time I decided to try a blended version. This is Cookie & Kate’s Ultimate Gazpacho.

I liked this version because you can make the gazpacho however you like it. You can barely blend it so the soup is really chunky, you can blend it until it’s completely smooth, or you can do what I did, and blend it right in the middle. (This is also what Kate suggested too).

Give this soup at least two hours to chill. I ate it in the evening and again the next day and it just continued to get more flavorful.
