Bang Bang Cauliflower Rice Bowl

I’m back again with my favorite cauliflower recipe. I’m trying not to inundate you with it but it’s really that good. So, if you want me to stop talking about it, go ahead and make it. I just can’t have you missing out on this!

One of the things that helps me to eat home cooked food and lower stress is making extra food and having a plan for it.

Rice bowls are one of my favorite and easiest ways to do this. You can take whatever ingredients you have laying around and make them into a delicious and nutritious bowl. They are great to take for lunch or a quick and easy dinner the next night. Plus, no food waste. A win all around!

Ingredients

1 cup jasmine rice (any rice will work)

Frozen shelled edamame

1 avocado

1 package of seaweed

Bang bang cauliflower

  • rinse rice and drain water.

  • add 2 cups water to the rinsed rice, bring to a boil, cover and reduce heat to simmer for 20 minutes.

  • bring a small pot of salted water to a boil and add frozen edamame. cook for about a minute or until edamame is warmed through.

  • cut avocado into bite sized pieces.

  • use scissors to cut sheets of seaweed into small strips.

  • add rice to bowl (I also add a little tamari, sesame oil, and sesame seeds to the rice and mix), top with bang bang cauliflower, edamame, avocado, and seaweed. feel free to add any other ingredients you like or make substitutions.

  • serve and enjoy!
