Blender Oatmeal Pancakes

Weekend breakfasts are my favorite. They are probably my favorite because it is the only time I actually eat breakfast. Between work and my yoga practice I usually snack on some fruit and then eat lunch as my first meal. So, weekend breakfasts are extra special! 🏻

I try to switch it up every week and make something new but I find I come back to pancakes and waffles a lot. One of my favorite things to do is to play around with vegan and gluten free pancakes that don’t make my family immediately ask, “are these gluten free?” 🤦🏻‍♀️

What I’ve come to find is that a mixture with mostly or only oats and just a little gluten free flour yields the best result for us.

As soon as I see a new pancake recipe with oats I’ve been trying it. My hope is to figure out what I (and my family) like and don’t like so I can come up with our custom version of oat pancakes.

These pancakes are Blender Oatmeal Pancakes by Cookie and Kate. They are very similar to the other ones I’ve made using both banana and oats. Using the blender made these even easier and created a nice smooth texture. Parker and I both liked this but Dave prefers the texture of the raw oats. We ate them all so I would say they are a win!

Oats are among the healthiest grains on earth. They’re a gluten-free whole grain. They are also a great source of important vitamins, minerals, fiber and antioxidants. Oats are rich in carbs and fiber, but are also higher in protein and fat than most other grains. They are a great way to start your day!
