Colorful Veggie Sesame Noodles

I think one of my favorite things about eating vegetables is how colorful your food can be. I love looking down at my plate and feeling like I am literally eating a rainbow.

Why is it important to eat a variety of colors? Each color has its own unique health benefits. So 'eating a rainbow' each day means more than just getting enough fruit and veggies– it's about eating a wide variety of foods so your body gets all the essential nutrients it needs. And in times like these getting all the nutrients you need is vital to keeping your immune system strong.

This recipe is from Cookie and Kate. It is Colorful Veggie Sesame Noodles. I love how all the colors just pop at you! Not only did it look amazing, it tasted amazing too! I altered the sauce a little because I didn’t want to use as much oil as the recipe called for. I included my alterations on the sauce below. Let me know in the comments below if you try it!

Sauce Alterations (I added these to her sauce ingredients)

  • 1 tbsp peanut butter

  • 1 tsp honey

  • 1 tsp gochujang

  • 1 tbsp water

I also decreased the sesame oil from 1/4 cup to 1/8 of a cup.
