Fluffy Gluten Free Naan & Lentil Kale Soup

The cooler weather has me craving bread and soup like nobody’s business. 😋Lentil and kale soup is a staple in our house (even when it’s not cool outside 😂). I wanted some homemade bread to go with the soup and I really wanted it to be gluten free.

As I’m dreaming about gluten free bread I was also checking emails. What pops into my inbox but Minimalist Baker Fluffy Gluten Free Naan. Talk about synchronicity! 🙌🏻 

🥖 While my version does not have the beautiful round edges that hers has, it tasted amazing. As with most things in life I like to add my own flair to it (scalloped edges 😂) The best part about this naan is my family had to ask me if it was gluten free. 🙌🏻

Lentil Kale Soup Ingredients

2 tbsp olive oil

1 medium chopped onion

5 cloves garlic chopped

1/2 tsp chili flake

5 1/2 cups of water

1 1/2 cups of yellow lentils

1 tbsp curry

3/4 cup coconut milk

1 bunch of kale, chopped

  1. In a soup pot heat the 2 tbsp of olive oil. Once warm add the onion, garlic, and chili flake. Cook over medium heat until onion is soft.

  2. Add water and lentils and simmer 20-50 minutes until lentils are soft.

  3. Add curry and coconut milk and stir to combine.

  4. Remove from heat and puree with an immersion blender.

  5. Return to heat and add kale. Cook for a few minutes until kale wilts but is bright green in color.

  6. Enjoy immediately.
