Green Salsa

Holy guacamole! (sorry I couldn’t help myself). This is one of the best sauces that I have tasted in a long time. I also cannot take credit for this one. Dave, my sweet husband, was the creator of this amazing sauce.

Dave did a lot of research on how to make a guacamole sauce. He knew he wanted to use tomatillos as the base for his recipe. He ended up combining several different recipes. This sauce includes tomatillos, zucchini, jalapeño, avocado, garlic, lime, cilantro, olive oil, and salt.


We have eaten this sauce on just about everything you can imagine; tacos, crackers, sourdough breeds, sandwiches, over veggies, etc.


I highly recommend you try this sauce out. Let me know if you try it!

Ingredients

4 tomatillos

2 zucchini, cut into 4 large pieces each

2 large garlic cloves, peeled and crushed

2 jalapeño, sliced in half

1 small lime

1/2 avocado

Small handful cilantro

1 tbsp olive oil

Salt to taste

  • Add zucchini and tomatillo in a small sauce pan with salted water. (Enough water to cover vegetables). Bring to boil and cook for 6 minutes. Set aside

  • In cast iron pan add olive oil, jalapeños, and garlic. Cook until jalapeños are blistered and garlic is lightly browned.

  • Add tomatillos, zucchini, jalapeños, garlic, avocado, cilantro, and lime to a blender or food processor. Blend until smooth and creamy. Add salt to taste.. Will keep in the refrigerator for 2 weeks (if it lasts that long).
