Savory Chickpea Pancakes with Leek and Mushrooms

I love to eat with my hands and have ever since I was a kid. If I can wrap up a bunch of ingredients in some sort of vehicle and not need a fork and knife I’m a happy camper. If that vehicle happens to be a pancake then I’m ecstatic.

Imagine my delight when I found this amazing recipe by Minimalist Baker for Savory Chickpea Pancakes with Leek and Mushrooms. Not only were these delicious but they were super simple to make. The pancakes are literally chickpea flour, sea salt, and water. The hardest part was letting the batter sit for 15 minutes. While your batter sits you can get your mushroom leek filling ready. It times out perfectly!

I did add some kale to the recipe just because I had some that I needed to use. You could really add anything to these pancakes. They were even delicious on their own.
