Spicy Tempeh and Green Bean Stir Fry

Ever have one of those weeks where you had grand plans of what you were going to get done and then nothing worked out the way you thought it would?

That was a good summary of my week. Dave had surgery and my dad ended up in the hospital. Next thing I know I was running around like crazy and none of the things I planned were getting done.

Getting to the grocery store took a backseat. The last few days I was coming home to an almost empty fridge. While it’s not my favorite thing, it does help me to get really creative with the few things I do have.

I opened the fridge and all I had left were green beans and tempeh. Enter spicy tempeh and green bean stir fry by Dianne Wenz. I actually found the recipe on The Vegan Atlas site.

The green beans were cooked to perfection, still crunchy, and I loved the spices sauce. I did amp up the spice quite a bit but the flavor would be amazing even if you didn’t.

The best part…..it all came together in about 30 minutes. Simple and delicious is what helps keep me in the kitchen even when life gets crazy.

  • I added 1 tbsp of red pepper flakes instead of 1 tsp

  • I used 2 tbsp of ginger instead of 1 tbsp
