Vegan & Gluten Free Minestrone

What do you see in this picture? Maybe it looks like a delicious bowl of soup. It certainly is that. But there is so much more behind why I have a love affair with cooking. It is about what it represents. For me, it is that time of day when my family sits down together to eat something made with love. It is time for connection, where we share our stories from our day, laugh, vent, tell horrible jokes, and make plans for our future. We connect over food. It brings us together. There is something special about food made with love. It just tastes different. In this day and age, we need more connection. Share some food with those you love. Take the time to connect and really listen. There truly is no greater gift.

I am not normally a lover of minestrone soup. I can’t tell you why I decided to make it. My family was definitely not happy, until they tasted it. The vegetables were still super crisp and the gluten free pasta was not gummy. This makes a lot of soup so I was really worried about how it would taste the next day. It was still just as tasty.
