Vegan Caesar Salad with Homemade Sourdough Croutons

I was never a fan of Caesar salad when I was a kid. I didn’t like the idea of anchovies and egg in my salad, even if I couldn’t technically see them. 😂

Dave on the other hand is a big fan. He had been wanting to play around with a vegan version.

In all good relationships you have to be able to compromise. So I gave in and agreed to give it a try.

He did most of the work and came up with a really good dressing that we’ve used on all kinds of salads, not just Caesar. It’s so good, flavorful, thick, and creamy! You won’t want to miss this recipe!

I’ll post the dressing recipe plus our version of a Caesar salad with homemade sourdough croutons! Once you make it let me know what you think!

Ingredients for dressing

1 1/2 cup raw cashews

1 cup warm water

3 cloves garlic

1/2 lemon juice

1 1/2 tbsp olive oil

1 tsp salt

pepper to taste

1 bunch of kale, chopped

3 tomatoes, chopped

2 pieces of sourdough bread, cut into cubes and toasted

  • To make the dressing add cashews, warm water, lemon, olive oil, garlic, salt, and pepper and blend on high speed until creamy

  • Taste and more water to thin the dressing or lemon to brighten it.

  • Set aside

  • Add kale to a bowl and massage until it turns bright green.

  • Add dressing and mix until kale has a light coating.

  • Add tomatoes and croutons and enjoy!
