Vegan Gluten Free Blueberry Pancakes
Holiday weekends are made for pancakes. These aren’t just any pancakes, they are vegan gluten free blueberry pancakes. 🙌🏻
🥞Parker and I have been experimenting with different recipes and came up with a mix of several that we really like. They are so fluffy, moist, and delicious! You know they are good because I am the only person in my household who is vegan and gluten free. We usually make a double batch so we can freeze them for Parker’s breakfast during the week.

Ingredients
1 1/4 cup gluten free flour (I love Bob’s Red Mill)
1 tbsp coconut sugar
3 1/2 tsp baking powder
1/2 tsp salt
1 1/2 cups almond milk
1 vegan egg
3 tbsp vegan margarine melted (I love Earth Balance)
Fresh blueberries
Mix all dry ingredients together.
Add almond milk, vegan egg, and margarine and mix together until smooth.
Warm griddle over medium heat. Put a light pat of margarine on griddle. Once griddle is warm pour 1/4 cup of pancake batter and add blueberries to taste.
Flip pancakes after approximately 3 minutes or when pancake is golden brown.
Cook on other side for approximately 3 minutes or until golden brown.
Enjoy immediatley.
