Homemade Vegan Granola
I love granola. It is great plain, with almond milk, over cashew yogurt, or mixed with fruit. It is my favorite quick and easy breakfast food.
I usually buy granola at the store. Unfortunately, it has so much extra sugar and it’s loaded with preservatives.
Yesterday I decided to make my own granola. I could almost kick myself. It is the easiest thing to make. 🤦🏻♀️ Not only do you know exactly what goes into it, it makes your house smell amazing! 🤤
I actually combined elements that I liked from several different recipes. Then I crossed my fingers it would work out.
It ended up being delicious. It is vegan and gluten free! I couldn’t wait to wake up this morning and eat it for breakfast! Check it out and let me know what you think!
Ingredients
3 cups old fashioned oats
1 1/2 cups roughly chopped nuts of your choice (I used half pecans and half almonds but you could also use walnuts or cashews)
1/2 cup flaked coconut
1/2 cup gluten free flour (I used Bob’s Red Mill 1 to 1 Baking Flour)
1/2 tsp salt
1 tbsp cinnamon
1 tbsp vanilla
1/2 cup maple syrup
3/4 cup melted coconut oil
Preheat oven to 300 degrees.
Mix the oats, nuts, coconut, gluten free flour, salt, and cinnamon together.
Mix the vanilla, maple syrup, and melted coconut oil together.
Combine the dry and wet ingredients together until fully combined.
Spread the mixture evenly onto 2 unlined baking sheets in a single, even layer.
Bake for 40 minutes. Stir at the halfway point.
Remove from oven and allow to cool on baking sheets.
Once cooled store in a sealed container.
