Vegan Cinnamon Raisin Sourdough French Toast
This was a surprise breakfast over the weekend! At the encouragement of my friend and baking mentor Nora Goodloe I decided to branch out and make a cinnamon raisin sourdough bread.
This scared me on a few levels. I am not a great baker. I am not precise with my measurements, I just wing it most of the time. These are not the qualities of a good baker.
I looked at a few recipes, saw that I needed to invest more time and then decided to just wing it. I didn’t soak my raisins. I didn’t measure the cinnamon. I just threw it all in the dough. The bread gods were on my side that day because it worked out perfectly. I do understand why it’s important to measure because I have absolutely no idea how to replicate it.
We used the cinnamon raisin sourdough bread to make Vegan French toast. It turned out even better than I imagined.
I created this recipe back years ago when I owned a couple of restaurants. It is so easy and the taste is out of this world. Let me know if you are going to try it!
Ingredients
1 cup almond milk
1 1/2 tbsp nutritional yeast
2 tbsp gluten free flour (you can use regular all purpose flour as well)
2 tbsp coconut sugar
1/2 tsp salt
2 tsp vanilla
cinnamon to taste
cinnamon raisin sourdough bread (any crusty bread will do)
Whisk all ingredients together.
Heat a skillet over medium heat. Add a little vegan butter in pan to keep the bread from sticking.
Dip both sides of your bread in mixture and place in the warm skillet. Allow to cook until browned on both sides, approximately 3-5 minutes.
Enjoy with topping of your choice!
