Pumpkin Chocolate Chip Skillet Cookie

I love fall because I love cooking with pumpkin. I know I could technically cook with pumpkin any time of year but it just seems to taste better in the fall.

I have used pumpkin in cookies, waffles, pancakes, and even cinnamon rolls. (I may need to revisit the cinnamon rolls again )

I love a good pumpkin chocolate chip cookie. I love it even more when it all happens in one skillet! Anything that helps to simplify my life is a win in my book.

This is Pumpkin Chocolate Chip Skillet Cookie by The First Mess . This cookie is vegan, grain free, and uses maple syrup as the sweetener. It was delicious, chewy, and gooey. I will definitely be making it again.

As a side note: plan ahead! You are supposed to let the cookie sit for about an hour after you bake it. P and I couldn’t wait so we dug in after 5 minutes. It was still delicious! We set the rest aside and ate it the next day and it tasted even better.
