Quinoa Taco Meat
There are not many things I like more in this life than a good taco. We eat tofu tacos, mushroom tacos, vegan chorizo tacos, sweet potato and black bean tacos, basically anything we can season to taste great in a taco gets made into a taco.
But I’ve always missed the tacos we had when I was little. They were super simple; corn tortilla, meat, lettuce, tomato, and sometimes salsa. Simple and delicious.
When I saw this recipe by Minimalist Baker for Quinoa Taco Meat I knew I had to try it. Now, I’m not trying to convince anyone that this tastes the way meat does, I’m not going for that. But the texture and the spices get it pretty damn close to how I remember it.
The true test is always how Dave and P react to it. It was a hit! They both loved it! While I’m usually the one eating up all the leftovers they were making nachos and quesadillas with it before I even had a chance to get to it. That is a success in my book.
