RAMEN!!!

Did you know that January is (among other things) national soup month? I am late to the party. This is a delicious bowl of ramen that I made yesterday. The thing I love most about ramen is you can add any veggie to it and it still tastes amazing! This bowl has bok choy, broccoli florets and stems, carrots, and kale. I saute the veggies in sesame oil until just barely tender. I boil 2 cups of water with lots of fresh grated ginger and some gochujang. I like my soup a little spicy. I add my rice ramen noodles to the water mixture and 1 tsp of Bragg’s Amino Acid and cook for 4 minutes. Add everything together in a big bowl and enjoy!

You don’t need a huge budget or tons of time to eat healthy. Most of the meals I make for myself or my family can be ready in under 30 minutes. The more you eat home cooked food the more you will crave it. Don’t overcomplicate it. Just do a little planning so you have what you need when you get home. You won’t regret taking the time to cook for yourself or your family.

If you’re having trouble getting started then reach out. I love helping people figure out why they want to eat healthier and creating a plan to make it happen.
