This is a super fast and easy stir fry that will leave you feeling completely satisfied.
Ingredients:
+ Tofu (drained and cut into small pieces)
+ Broccoli (use the stem and the florets cut into bite size pieces)
+ Carrots (Cut into 1/2 inch pieces)
+ Edamame
+ Ginger (Peel and grate. Use as much as you like)
+ Soba Noodles
Boil water and add soba noodles. They usually take about 7 minutes. When there are 2 minutes left add the edamame. In a saute pan over medium heat add some oil (I used sesame) and add in tofu. Allow it to lightly brown on both sides. Add in broccoli and cook for a few minutes. Then add the carrots and grated ginger. Stir fry for about 4-6 minutes (this will depend on how crunchy you like your veggies. I like mine crunchy so I usually only stir fry for about 4 minutes max). Remove from heat and mix in with soba noodles and edamame. Add sauce of your choice. I like to mix Bragg’s Amino Acid, Gochjang, rice wine vinegar, and water.
