Roasted Veggie Lettuce Wraps
After my total fail for lunch the other day, Dave came back and saved the day! ππ» He made these incredible roasted veggie lettuce wraps.
π₯¬The veggies are coated in a mixture of flour, salt, pepper, harissa, and smoked paprika and then roasted. The secret sauce is a mixture of veganaise, mirin, and hoisin. Put the veggies, the secret sauce, and a squeeze of sriracha on the romaine and sit back to enjoy this tasty treat!

Roasted Veggies
1/4 head of cauliflower cut into florets
1/4 head of broccoli cut into florets
3 medium carrots cut into 1β pieces
3/4 cup flour
1 cup of cold water
1 tsp harissa
1 tsp smoked paprika
salt & pepper to taste
Sauce
2 tbsp veganaise
1 dollop hoisin sauce
1 tsp mirin
Additional Ingredients
Romaine Lettuce Leaves
Sriracha
Preheat oven to 400 degrees. Combine flour, water, harissa, smoked paprika, salt and pepper to make batter. The consistency should be similar to pancake batter.
Place cauliflower, broccoli, and carrots in batter and cover completely. Place florets on a baking sheet with a silicone baking mat or parchment paper. Bake for 12 minutes on one side, flip and cook for another 12 minutes. Veggies should be golden brown. Remove from oven and set aside.
Combine veganaise, hoisin, and mirin.
Wash romaine leaves and pat dry.
Place roasted veggies on romaine leaf, drizzle some of Daveβs secret sauce, and top with sriracha to taste. Enjoy immediately!
