Spicy Tofu with Creamy Coconut Sauce

Lately I’ve been craving simple but super flavorful meals. I mean, who doesn’t?!?

Curry is a favorite in my household. The combination of spices with the richness of coconut milk is something I crave often.

When I saw this recipe for Spicy Tofu with Creamy Coconut Sauce by Lisa Lin, I knew I had to try it.

It was the perfect blend of spicy creaminess! You could definitely just make the tofu and be totally happy but I paired it with some rice and sautéed spinach. A complete and delicious meal!

People always ask me why I post so many recipes. Food has been an integral part of my healing journey.

Making meals for myself and my family is one of the many ways that I keep my stress levels in check. If I get too busy or feel like I don’t have time to cook then I know that not only am I trying to do too much in a day, I’m not making my health a priority. That usually doesn’t turn out well for me.

Don’t get me wrong, some days I have to throw a meal together on the fly, but it is still made with wholesome ingredients that I know will nourish me and my family.

Here are my modifications:

  • I didn’t pan fry the tofu, I used my air fryer. I tossed the tofu in about 1 tsp of avocado oil and sprinkled it with salt and pepper.

  • I didn’t have any shallots so I subbed half of a yellow onion.

  • I added more ginger. It ended up being about 3 tablespoons.

  • 1 used 5 tablespoons of sambal oelek. I like a little spice!
