Veggie Lo Mein
Lunches have required more creativity than normal lately. Feeding an 11 year old is not like feeding my husband, who will eat whatever I make. Veggies for breakfast, lunch, and dinner isn’t always Parker’s favorite.
I’ve been trying to recreate some dishes she really enjoys when we go out to eat. This was my version of a veggie lo mein. I used udon noodles, added stir fried broccoli, mushrooms, and carrots. The sauce was a little harder. I know most lo mein sauces use teriyaki sauce, which we don’t have. I mixed hoisin sauce, soy sauce, honey, and ponzu. We topped the whole thing off with sesame seeds. It turned out really good and Parker asked if we could have it for lunch again. A definite win!
Here is my best guess at how I made the sauce. I recommend tasting as you go to see what you like.
1 tsp hoisin sauce
2 tbsp soy sauce
1 tbsp honey
1 tbsp ponzu
Mix together and thin with a little water if needed.
