Baba Ganoush
I’m overflowing with eggplant over here. 😂 I’ve been trying to use them in lots of different ways so that we don’t keep eating the same meals over and over.
Since we were out of town recently, I had two rounds of eggplant from the farm that had to get used before they went bad. (We all know how upsetting that would be to me 😭😭).
I’ve always wanted to make baba ganoush but figured it would be complicated and time consuming. It was far from it! The whole process (not including the time it took to preheat the oven) was about 20 minutes.
This is called Simple Baba Ganoush by Minimlaist Baker. I decided not to peel the eggplant, which sped things up a bit. I also used Japanese eggplant which is a little harder to peel since it’s so small.
I absolutely love this recipe. I added more lemon for that extra brightness. Add a side of falafel, some veggies, and pita and you have the perfect meal. I’ll definitely be making this again!
