Thai Basil Eggplant
My share from our local farm has been filled with lots of eggplant and sweet peppers. While I love them both dearly, I have been looking for inspiration for some new recipes to make with them.
I love trying new recipes. I am not really brave enough to come up with my own original recipes all the time. I like to take someone else’s recipe and then tweak it to make it my own. It feels a lot safer to know that i won’t botch the whole thing and have to throw all the ingredients away. I’m so weird about wasting food.
This recipe is Thai Basil Eggplant by Vegetarian Gastronomy. Not only was it totally delicious it was super easy to make. That is so important to me. While I love to cook and could spend hours in the kitchen, I don’t have time during the week. Between work, school pick up, after school activities, and life in general, I love recipes that are quick, easy, and delicious. I changed this up a little because I didn’t have some of the ingredients and some I just didn’t want to use. Everything still tasted amazing. If you have an abundance of eggplant and sweet peppers give this recipe a try. You won’t be disappointed!
**When I made this recipe I used 4 medium Japanese eggplants. I didn’t use any green bell pepper because I am not a huge fan of them. I had a ton of small sweet peppers so I used those instead. When I made the sauce I used 1/4 cup tamari and 1/2 cup water. I also added lots of extra chili sauce.
