Mushroom Adobo

Do you love mushrooms as much as I do? I think one of the things I like about mushrooms the most is how versatile they are. They have a meaty texture and are packed full of vitamins, minerals, and antioxidants. I have yet to meet a mushroom I didn’t like.

I was browsing through recipes and came across this recipe for Mushroom Adobo by Rajah Abat. Since adobo is normally made with chicken or pork I knew I had to try this vegetarian version!

I changed the recipe up a little because I didn’t have everything on hand. I didn’t have mushroom bouillon powder or any bouillon for that matter, so I decided to sub in 1 1/2 tsp miso paste. I only had crimini mushrooms and not the mixed mushrooms it called for. I read the reviews before I started and as advised left out the salt. I thought the recipe was super flavorful without it. This was an amazing recipe and the addition of the arugula made it even better!
